At the Plough and Sail we love to use local, seasonal produce – celebrating food when it’s at its best is something that myself and the rest of the chefs are passionate about. Autumn is a fantastic season for hearty, comforting food and fresh produce is readily available around the Suffolk coast. We use local suppliers wherever possible, including butchers, fishermen and farmers to name a few from the local area.
Some of the best ingredients found at this time of year include root vegetables, game, scallops, wild mushroom, apples and mussels – all of which can be found on our menus throughout the autumn.
Recently, at the Aldeburgh Food and Drink Festival I did a food demonstration using a favourite recipe of mine that can be found on our October menu – crispy belly of pork on a creamy root vegetable and pancetta fricasse with local black pudding and new potatoes. The perfect dish to celebrate the change of seasons!
